I love cooking so much; if you work with me, you’ll notice the kitchen is where I have the most opinions in a home! Each season I pick a new recipe to share as I meet new people or as a way to stay connected to the old. Some are my own personal recipes but many are ones I find online & inspire me. Bon Apétit!

Spring 2023 - Tropical Chia Pudding




Summer 2023 - Summer Salsa (credit: me!)

Ingredients -

  • 1 whole lime

  • 1 whole lemon

  • 3 large corn husks

  • 1 whole jalapeno

  • 1 cup grape tomatoes

  • Salt to taste

  • 1-2 cups fresh cilantro to taste

  • 1/2 cup finely chopped red onion

  • 1 tsp Garlic

  • 1 tsp Onion Powder

Instructions -

  1. Shave off the corn from the cobs + chop all ingredients into small pieces.

  2. Pour into a bowl & mix.

  3. Use a juicer to squeeze lime + lemon into the mixture.

  4. Season with salt until liking.

    Options: add edamame, cucumber or black beans!

    For best flavor, allow to sit in the fridge for a couple hours + enjoy!

Fall/Winter 2023 - Whipped Pumpkin Feta

Ingredients -

  • 8 oz block of Feta Cheese, drained

  • 1 can Pumpkin Puree

  • 1-2 tbsp Honey

  • 1 tsp Thyme

  • Chopped Raw Walnuts

  • 1/4 cup Plain Greek Yogurt

  • Black Pepper

Instructions -

  1. Add the feta cheese and greek yogurt to a food processor. Blend ingredients together for a few minutes until smooth, scraping down with a spatula as needed.

  2. Add pumpkin puree, 1 or 2 Tbsps of honey (depending on desired sweetness), thyme, & a few cracks of black pepper to the food processor. Blend again until all ingredients are combined.

  3. Transfer whipped feta to the fridge & chill (covered) for 30-60 minutes. This is necessary to harden & chill the dip.

  4. When you're ready to serve, transfer the whipped feta to a large bowl. Garnish with a handful of chopped walnuts (optional), a generous sprinkle of fresh thyme, an extra drizzle of honey, & more pepper.

  5. Serve with crusty/toasted bread or crackers for dipping!
